No bake cheese cake - a revival of a 90ies classic

[No baking – easy and super quick]

250g cream cheese
250g cream
2 teaspoons vanilla sugar
50g sugar
3 teaspoons of gelatin

sponge fingers or sponge cake
rum
fruit e.g. blueberries, raspberries

Dip the sponge fingers in watered rum. Line the sponge fingers in the baking tin.

Mix cream, cream cheese, sugar and vanilla sugar. Dissolve the gelatin in warm water and add to the mixture.

Apply half of the mixture on the sponge fingers and sprinkle with fruit.

Add the other half of the mixture and decorate with seasonal fruit.

With a little variation, bring the 90ies back to life: canned peaches on the cake covered with gelatin do the trick.
