Dim Sums – endless variations

[Try homemade dim sums with different fillings and colours – easier than expected]

200g flour
200ml milk
½ teaspoon salt
250g minced meat from beef and pork
½ bunch of spring onions
2 red chili peppers
a thumb-sized piece of ginger
oil, a dim sum basket and paper forms (as used for muffins)

Make dough using flour, salt and milk.

For the filling blend spring onions, chili peppers and ginger in the mixer and fry in a pan with a little oil. Add the minced meat.

Shape balls of dough. Roll them out. Place a tablespoon of filling in the middle. Close the dim sums.

Put the dim sums into the basket. I use paper forms, otherwise they stick to the basket.
Boil water in a pan. Put the dim sum basket into the pan and steam them for aprox. 7 minutes.
Remove the basket and serve the dim sums.

Add spinach to the dough to get green dim sums. Add beetroot for pink or sepia ink for blue ones.
