onigiri

simple onigiri

[A very dear friend of mine is a huge fan of Japan and we love meeting up at the Japanese supermarket to discover new things.]

For approx. 10 onigiri:

1 nori sheet
2 cups sushi rice
1 pinch of salt
1 tbsp rice wine vinegar

1/4 cucumber
1/2 avocado
70g smoked salmon
a little truffle mayonnaise
black sesame seeds or furikake

Thoroughly rinse 2 cups of sushi rice using a strainer and let it soak in water for about 20 minutes.

In the meantime, chop the vegetables and salmon.

Bring the rice to a boil with 4 cups of water and a pinch of salt. Reduce to a low heat and let it simmer until almost all of the liquid has absorbed. Stir in the rice wine vinegar and allow it to cool down slightly.

Portion the rice and place it onto a clean surface. Top with the vegetables, salmon, sesame seeds, furikake, and truffle mayonnaise, then cover with another layer of rice.

Wrapped in cling film, onigiri make the perfect snack to go.

Shape the onigiri with wet hands or use an onigiri mold. Cut the nori sheets into strips. Moisten them slightly and wrap them around one side of the onigiri.
