red curry fish - hot and easy

[i love hot food – red chilis make me happy.]

1 Fish per Person (eg. sea brass)
4 red chillis
a thumb sized piece of ginger
2 gloves of garlic
4 branches of fresh coriander
2EL Fish sauce
3 Limes
4 pieces of lemon grass
1Tsp sugar
pepper

squeeze the limes. Cut ginger, chillies, garlic and coriander. Add fish sauce and lime juice.

Cut the skin of the fish. Apply the mixture and put the fish in the fridge.

Bake the fish on aluminium foil in the oven. Each side 5 to 10 Minutes.

this recipe is ideal for barbecue as well.

Make a sauce with cut lemon grass, coriander, salt, fish sauce, pepper and lime juice.
